Vegetarian Cantonese rice

Ingredients:

600g Basmati rice

600g Peas

120g Carrots 

100g Onions

14g Garlic

70ml Soy sauce

120g Sweetcorn 

4 Eggs

200g beansprouts

1 handful Parsley

1 handful Coriander 

Peanut and sesame oil

Method

1. Cook the peas and set aside.

2. Peel and finely slice the onions. Peel and dice the carrots. Peel and chop the garlic.

3. Heat the peanut and sesame oil in the frying pan and sauté the onions and carrots.

4. Add garlic, peas, sweetcorn, beansprouts, soy sauce and cook for 5 min before ridding.

5. Make an omelette with the eggs, then dice it.

6. Cook the rice whilst sautéing your vegetables

7. Once everything is cooked mix together and add your chopped parsley and coriander and serve hot.
