Tomato and Mozzarella Bruschetta

Ingredients:

This a great recipe for using up leftovers 

Tomato 
Mozzarella 
Basil
Bread 
Olive oil
Garlic, salt, pepper

Method

1. Make a compote with crushed tomatoes, olive oil,  sautéed garlic and basil. Season to taste
2. Spoon the sauce on the bread
3. Top with torn pieces of mozzarella and chopped basil.
4. Place under the grill, checking every few minutes to prevent burning.
5. Serve with a green salad with herbs and sunflower seeds.
