Garlic and Parsley Potatoes

This recipe is to be used as side dish and serves 2 - 3 people

6 - 8 Medium Sized New Potatoes, not peeled
10 garlic cloves, chopped
Salt and pepper to taste
Olive oil


1. Put a pot with enough water to cover the potatoes in the stove and bring it to boil. Put a pinch of salt.

2. Once the potatoes are cooked (the fork gets in and out easily), remove them from the pan and put them in an oven tray, all scattered.

3. Turn the oven on at 180C

4. With a spoon, press each potato slightly down

5. Scatter the chopped garlic on top of each potato, spreading out evenly

6. Scatter the chopped parsley evenly on top of each potato

7. Pour the olive oil on top of each potato and also table salt to taste

8. Put the tray in the oven at 180C until their skin is dried and crinkled. This should take 10 - 15 min

9. Once ready, remove from the oven and serve immediately
